Peach Caprese Skewers with Balsamic ReductionPrint Recipe
- • 1 pint cherry tomatoes
- • 25 basil leaves
- • 3 peaches, cut into 1 inch cubes
- • 1 package bamboo skewers (about 4 inches long)
- 1/2 cup balsamic vinegar
- 2 tablespoons sugar
To make the reduction place the balsamic and sugar together in a small saucepan. Bring to a boil and immediately lower to a simmer and cook uncovered about 10 minutes until it’s thick and reduced. Be careful not to reduce too much otherwise it will be too thick. Remove from heat and let cool.
Assemble the skewers by layering the tomato, peach, and threaded basil on skewers. Serve chilled or room temperature with reduction drizzled over.
