Miso Apricot Glazed Turkey

Serves: 4-6


  • 1, 3 lb turkey roast (dark or white meat), preferably in the netting
  • 2 tablespoons white miso paste
  • 1/4 cup apricot preserves
  • 1 tablespoon minced garlic
  • 1/2 cup chopped dried apricots
  • 1 cup pearl onions
  • 1/4 cup white wine
  • juice of 1 lemon
  • 8 sprigs fresh thyme
  • 3 tablespoons olive oil for drizzling



Preheat oven to 400 degrees and position rack in the upper third of the oven


Place turkey roast in a 10-inch ovenproof baking dish. Massage turkey with miso, apricot preserves, and garlic. Lift turkey up and add in the chopped apricots onions- rest turkey on top. Pour over the wine, lemon juice and surround with turkey with the thyme. Drizzle the top with olive oil. (editor’s note: if you use a pan much larger than the size of the roast, you may need to add more wine and olive oil-smaller pan is preferable)


Bake uncovered for 25 minutes until browned. Cover and bake an additional 50 minutes until an internal thermometer reads 165 degrees. Let rest for 10 minutes, remove netting and slice. Serve with apricots, onions and sauce poured over.
