Lentil Burgers with Lemon Crema

Serves: 16 burgers


  • Burgers:
  • 2 eggs
  • 3, 15 oz cans precooked lentils (rinsed and strained) or 5 1/2 cups cooked lentils
  • 1 cup sautéed shitaki mushrooms
  • 1/4 cup scallions, chopped
  • handful of dill, chopped
  • 1 1/2 tablespoons garlic powder
  • salt and pepper to taste
  • 3/4 cup garbanzo bean flour
  • olive oil for frying
  • Lemon Crema:
  • 1/2 cup sour cream
  • 1/4 cup light mayonnaise
  • 1-2 teaspoons fresh minced garlic
  • 1 lemon zested and juiced
  • salt to taste



For Lentil Burgers:


Whisk eggs together and add in all of the ingredients besides for garbanzo flour. Then add the garbanzo flour and mix well mashing lentils slightly with back of spoon to make a cohesive mixture.


Heat a large frying pan with olive oil and scoop 1/4 cup filled batter into pan. Fry on both sides until golden, about 4 minutes per side.


For Lemon Crema:


Whisk all ingredients together. Serve with warm lentil burgers
