Indian Spiced Rice Pudding

  • 2 cups coconut milk (full fat)
  • 2 cups almond milk
  • 3 Tbsp honey
  • 2 Tbsp maple syrup
  • ½ cup basmati rice
  • 1 star anise
  • 2 cinnamon sticks
  • ¼ tsp ground cinnamon
  • ¼ cup dried cherries
  • Optional: cinnamon for serving



Place coconut milk, almond milk, honey and maple syrup in a pot and bring to a boil. Add in rice, spices and cherries, and lower to a simmer. Cook uncovered until liquid has absorbed and rice is a creamy consistency, about 20 minutes.


Remove cinnamon sticks and star anise. Place in bowls and top with cinnamon. Serve warm.
