Guys! I was playing around with some ingredients I had laying around in my kitchen and in search of a really delicious, naturally sweetened and grain free dessert, I made these. And let me just tell you, they are one of the best desserts I’ve ever made even though they’re healthy. Melty chocolate, caramel-chewyness from the dates and almond flavor through and through. You MUST try these and if you don’t eat all of them fresh out of the oven try popping them in the freezer. Even more amazing. So excited about this one. So what are you waiting for? Go make these!
Healthy Chocolate Almond Butter BiscottiPrint Recipe
- 1 eggs
- 1 cup unsweetened almond butter
- 13 regular dates (if using madjool use 9-10)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/8 teaspoon almond extract
- 1/2 cup dark chocolate chips
Preheat oven to 350. Blend all ingredients aside from chocolate chips in a food processor.
Pulse until fully incorporated.
Remove the blade and mix in the chocolate chips by hand.
Press batter into a lightly greased cookie sheet forming a rectangle, similar to how you would shape biscotti.
Bake for about 10 minutes until golden brown. Let cool, cut into bars and try to not eat every single one in one sitting!
*I love keeping mine in the freezer. SO good frozen!
