  • 1 medium yellow onion, chopped
  • 3 garlic cloves, cut into quarters
  • 3 medium zucchini, chopped
  • 3 medium squash, chopped
  • 4 cups vegetable stock
  • salt to taste
  • big handful fresh dill
  • zest of 1 lemon, and juice (optional)
  • 1/4 cup parmesan cheese, grated
