Strawberry Thyme Galette

Ingredients

  • Dough-
  • 1 ½ cups all purpose flour
  • ½ cup corn meal
  • 1/3 cup sugar
  • ½ teaspoon salt
  • 7 tablespoons margarine (or butter) cut into small cubes
  • ¼ cup ice water
  • 2 teaspoons almond extract
  • 3 tablespoons non-dairy sour cream (or dairy)
  • Filling-
  • 3 cups firm strawberries, stems removed and sliced
  • 2 teaspoons corn starch
  • 2 teaspoons fresh thyme, minced
  • 1/4 cup sugar
  • ¼ teaspoon almond extract
  • 1 egg yolk
  • 2 teaspoons sugar

Instructions

In a food processor pulse together both flours, sugar and salt. Slowly add in the margarine pulsing in between each addition just until incorporated

Stir together the water, almond extract and sour cream. Add in to the food processor with machine running and blend until ball forms around the blade

Remove dough from food processor and chill in plastic wrap for 30 minutes

Meanwhile make the filling by mixing all ingredients together. Set aside and reserve

Remove dough from plastic and place in between two sheets of parchment paper, dusting with flour if necessary. Roll out into a 12-inch circle. Transfer to baking sheet.

Preheat oven to 350 degrees

Fill the center of the dough with strawberries at least 2-3 inches from the edge. Fold over edges of the dough over the strawberries making pleats in some places

Brush with egg yolk and sprinkle the top with sugar. Bake for 35-40 minutes until golden and bubbly

Remove from the oven and let cool 10 minutes before slicing. Serve warm or room temperature. Serve with whipped cream for added richness
