Red Wine-Pomegranate Poached PearsPrint Recipe
- 24 oz pomegranate juice (3 cups)
- 2 cups dry red wine
- 1 orange cut into 1⁄2 inch slices
- 1 cup sugar
- 1⁄2 tablespoon mulling spice
- 2 cinnamon sticks
- 4 black peppercorns
- 4 pears, peeled
Combine all ingredients besides for the pears in a medium pot. Alternatively you can place the mulling spice, cinnamon sticks, and pepper corns in a cheesecloth, and add it too pot with pomegranate juice, wine, orange, and sugar. Mix well and place pears in the pot, submerging the pears in the liquid. Bring to a boil and then lower to a simmer for 40-50 minutes until soft but not mushy. Pierce occasionally with a fork to test for doneness.
Let pears cool in the liquid then remove them from the pot. Strain the liquid through a mesh sieve (or remove cheesecloth with spices) and then return the pears to the liquid.
Store in an airtight container in the liquid until ready to serve. Heat and serve warm with a scoop of ice cream.
* Save leftover liquid to serve with the pears or to make a cocktail simply add alcohol of choice and some sparkling water, or champagne.
