Protein Packed Caesar salad

  • For dressing:
  • 1 cup silken tofu
  • 1/2 avocado
  • 2 teaspoon minced garlic
  • 2 teaspoons Dijon
  • 1/4 cup apple cider vinegar
  • salt and pepper to taste
  • 2 tablespoons anchovy paste
  • 1 lemon juiced
  • 2-3 tablespoons olive oil to bring it together
  • For croutons:
  • 1 package extra firm tofu, drained, dried with paper towel and cubed
  • salt and pepper to taste
  • 1/2 corn starch to coat
  • olive oil for frying
  • For salad:
  • kale (any variety you like), chopped with stems discarded
  • 2 cups cherry tomatoes, halved
  • 1 bunch of chives, chopped



For the dressing:


Put all ingredients except for olive oil in a food processor. process until smooth, while simultaneously pouring in olive oil to emulsify. Set aside


For tofu croutons:


Season cubed tofu with salt and pepper. Coat thoroughly in corn starch. Heat medium pan on high flame with olive oil. Fry tofu on all sides until very crisp and golden. Place on paper towel lined plate and reserve.


Assemble salad by mixing the kale, tomato, chives, and croutons. Toss with dressing. Tip: In order to make the kale wilt down a little more, massage the dressing into the kale first and then toss with tomatoes, chives and croutons. Enjoy!
