Grilled Cheese with a Clothing Iron

Ingredients

  • 4 slices bread of choice
  • 1 square of American cheese, cut in half
  • 2 Tbsp kimchi (well drained)
  • 1 ½ Tbsp apple butter
  • 3 Tbsp shredded cheddar cheese, or one slice
  • ¼ cup butter, softened, for spreading

Kimchi-American:

Spread one tablespoon of butter liberally on top of each slice of bread. Place one slice with butter side down on a square of tin foil. Top it with one half of the American cheese. Spread the kimchi out evenly over the bread, then top with second half of cheese and second piece of bread with butter side up. Cover with a second sheet of tin foil and close the two pieces together, sealing the sandwich tightly.

Turn the iron on (I like using the “cotton” setting, but you can use any since this is bread and not clothing!) and press the iron down on one side of the sandwich. Let sit for 3–4 minutes per side while continuing to press down as this sandwich is best super flat and crispy!

Apple Butter-Cheddar:

Spread one tablespoon of butter liberally on top of each slice of bread. Place one slice with butter side down on a square of tin foil. Spread half of the apple butter on the topside of the bread. Top with the cheddar cheese, then spread the other half of the apple butter on the other side of the top slice of bread. Close the sandwich and cover with a second sheet of tin foil. Close the two pieces of foil together, sealing the sandwich tightly.

Turn the iron on and press the iron down on one side of the sandwich. Let sit for 3–4 minutes per side while continuing to press down as this sandwich is best super flat and crispy! Remove foil, slice in half and serve warm!
