Farmers Market Lavender Loaf Cake

Ingredients

  • 3/4 C flour (I used some whole wheat)
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 2 T Earth Balance butter
  • 1/2 C palm sugar
  • 1 egg
  • 1/2 mashed avocado
  • 1/4 C almond milk
  • 2 tsp dried lavender
  • 1 tsp lemon zest

Instructions

Preheat oven to 350 degrees and grease a loaf pan with butter and flour.

Mix flour, baking soda, baking powder, and salt. Set aside.

In a stand mixer, beat together butter and sugar. Add the egg and beat well. Add avocado and beat again.

Pour in the flour mixture alternating with the milk and mixing until incorporated. Fold in the lavender and lemon zest until evenly distributed.

Pour batter into prepared loaf pan and bake for about 30 min or until a toothpick comes out clean. Let cool slightly and enjoy!
