Falafel Patties with Green Goddess Sauce

Ingredients

  • To make the patties:
  • 1 cup dried chickpeas
  • ½ cup parsley, chopped
  • ½ cup cilantro, chopped
  • ½ red onion, chopped
  • 3 garlic cloves, minced
  • ½ tsp cumin
  • 2 tbsp olive oil
  • ½ tsp salt
  • 3 pinches of pepper
  • Green Goddess Sauce:
  • 2 cloves garlic, minced
  • 1 cup parsley, chopped
  • ½ cup tahini
  • ¼ cup lemon juice
  • pinch sea salt

Toe make the falafel:

In a medium bowl cover the chickpeas with water and soak overnight-they must soak overnight in order to soften enough.

Preheat the oven to 375 F.

Drain the chickpeas from the water and place all of the ingredients in a food processor. Pulse until the mixture comes out smooth enough to spoon out.

With your hands form patties and place them on a baking sheet sprayed with oil. You should have about 8-10 patties.

Bake for 15 minutes and flip for another 10-12 minutes.

Remove and let cool for 5 minutes. Serve over a greens salad or as a side dish.

To make the sauce:

In a food processor blend all of the ingredients, except salt, until smooth.

Add water gradually for a thinner consistency. Season with salt.
